Fish Feature: Rockfish  
   

Also known as Striped Bass, the Rockfish was declared the official Maryland State Fish in 1965.  Rockfish are known for fighting, which makes them exciting to catch.  They feature a white underside, with iridescent silver and green stripes. 

Once a rockfish is born in the Chesapeake Bay, it will stay for three to five years before swimming out to the Atlantic Ocean.  They can live for as long as 30 years.

They are also great to eat because they are a light, white fish and not very oily.  See below for some recipe ideas!

Rockin' Rockfish Recipes
for your Fresh Chesapeake Bay Catch!
 
Broiled Rockfish     Fried Rockfish  

Filet the Rockfish, removing all scales and skin.  Place on a foil covered cookie sheet or in a glass baking dish.  Cover each filet with a thin layer of mayonnaise.  Squeeze lemon juice over them and sprinkle with Old Bay seasoning.  Broil until done and enjoy!

 

Filet the Rockfish, removing all scales and skin.  Cover the filets with seasoned bread crumbs (hint: roll the filets in melted butter or beaten egg whites first to get the bread crumbs to stick).  Coat a large frying pan with olive oil and fry the filets over medium heat until browned.  Then enjoy!

     
     
Grilled Rockfish     Baked Rockfish  

Grilling Rockfish can be tough because it is such a white, flaky fish.  Your best bet is to leave the skin on the filet and/or place heavy duty aluminum foil over the top of your grill.  Make sure the foil is coated with olive oil and check out our marinade and seasoning ideas below!

 

Filet the Rockfish, removing all scales and skin.  Place the filets in a shallow baking dish.  Add a few tablespoons of butter along with any other seasonings you like.  Cover and bake at 350 degrees for about 10-20minutes depending on the thickness of the filets.

Rockfish is great marinated in Italian salad dressing!  You can also use lemon juice, white wine or Dijon mustard.  For Asian-themed flavors, try soy sauce and teriyaki!

  As with all Maryland seafood, Old Bay seasoning is a great addition.  Lemon pepper, sea salt, dill weed and rosemary are also wonderful flavors to add.  Add some cayenne if you like a little kick!
